HONEY CAKE


8 eggs (separated)
1 cup white sugar
1 cup brown sugar
1 cup oil
1 cup honey
1 cup coffee (2-3 tsp coffee diluted in 1 cup warm water)
1 tsp. vanilla sugar
4 cups flour
2 tsp. baking powder
2 tsp. baking soda
1 T. sugar


Preheat oven to 350 degrees F.
Beat together sugars and oil in stand mixer. Add yolks one at a time beating after each addition. Add honey and coffee.
Sift together flour, vanilla sugar, baking powder and baking soda. Fold the dry ingredients into the mixture and beat well.
Beat the egg whites until stiff with 1 T. sugar. Fold the stiff egg whites into the mixture. Mix well on low-medium speed.
Pour into well greased baking pan(s). This recipe will fill an 18"x10" baking pan or 1 large loaf pan and 4 mini loaf pans. When filling the pan only fill 1/2 to 2/3 of the pan as the cake will rise. Bake for 1 hour.

CLASSIC ROASTED TURKEY

1 whole fresh turkey (12 to 17 pound)
1 large red delicious apple, pealed and cored
1/2 cup olive oil
coarse salt to taste
2 teaspoons black pepper
1-1/2 Tablespoons garlic powder
2 Tablespoons paprika
2 large onions(preferably Spanish onions), sliced into rings
1/3 cup orange juice

Preheat oven to 350 degrees F/180 degrees C.

Place apple in cavity of turkey. With a silicone brush, rub oil on all parts of the turkey. Sprinkle with salt, black pepper, garlic powder, and paprika. Spread over all areas with the silicone brush.

Place the onion slices on the bottom of a large roasting pan. Place turkey breast side up on top of onions. Pour orange juice around turkey. Cover tightly with foil. Roast for about 3 to 5 hours depending on the size of the turkey. If you are using a roaster cover the pan with cover. For open roasting pans, cover tightly with foil. Baste turkey a couple of times in roasting process. Meat thermometer placed in the thickest part of breat without touching the bone should read 180 degrees F or 82 degrees C. Remove foil and baste tukey with pan juices. Bake uncovered fo an additional 20 minutes to brown.

Allow turkey to cool before carving. After turkey is carved, return to roasting pan and baste the gravy and spoon onions on top of turkey. Cover pan. Reheat for appoximately 25 minutes in preheated 350 degree F oven before serving.

Serve with fresh cranberry sauce.

SQUARE CRANBERRY APPLE CRISP

Crust:
2 cups flour, sifted
2 cups dark brown sugar
1-1/2 cups oatmeal
1 cup(2 sticks) margerine, melted

Filling:
4 Cortland apples peeled, cored and diced in an onion chopper
1 bag of fresh cranberries prepared according to package directions
2 Tablespoons flour, sifted

Preheat oven to 375 degrees

Coat a 9 inch square springform (the Kaiser one is perfect) with nonstick spray, set aside.

In a large mixing bowl, mix the flour, brown sugar, oatmeal, margerine, and cinnamon. Press the mixture into the springform halfway up the sides using a spatula, reserving 1 1/2 cups of the mixture for the top.

In a mixing bowl, combine apples, cranberry sauce and 2 Tablespoons of flour. Mix well. Pour the apple mixture into the crust. Sprinkle reserved mixture over top using a spatula to cover all areas and fill the upper half of the sides. Bake for 40 minutes.
NOTE: You can use a 9 inch springform.

TIP: A glassbottom springform is great for serving purposes.
